In Diane’s Kitchen: She has a recipe for those of us who only eat breaded fried okra because we don’t like boiled okra. It is mouthwatering to look at. I’ve known of okra and tomatoes and eaten them on occasion but this is much fancier and I’m sure it will become a favorite of my husband’s. The added corn, bacon and hot pepper sauce are among the foods he loves.
While I was looking in my freezer today I found a bag of Okra that I had frozen in the fall, fresh from our garden. I wasn’t sure what I wanted to make with it when my husband said he saw cans of this vegetable mixture of corn, tomatoes and okra at the grocery store and it looked good. I had all of the ingredients to make it and I always have cooked and crumbled bacon in my freezer so I thought I would give it a try. I have never tried this combination before and I loved it! I have developed a love of Okra ever since we started growing it in our garden. I am finding I am liking southern recipes more and more as I get older.
Ingredients
In a large frying pan cook the diced onion over medium
heat in 1 Tbl bacon grease until tender.
