Leftover mashed potatoes, bacon, onion, eggs, cheese, butter, Ritz Crackers and more make up these delicious Loaded Baked Mashed Potatoes! Top it off with sour cream and you will think you are eating a regular loaded baked potato but without all the work of the potato shell.
Ingredients – Add sour cream (not shown) as a topping if you wish.
In a small bowl using a fork, slightly mix the eggs.
Add the dried minced onions, stir and set aside.
Spray a 2 quart casserole dish with cooking spray.
Put the Ritz Crackers in a bag and crush them into crumbs.
In a small bowl melt the butter and add the Ritz Crackers and paprika.
Using a fork stir until combined.
In a large bowl add the rest of the ingredients.
Stir until completely combined.
Place the potato mixture into the greased casserole dish.
